Pork Taco Bowls
Fantastic for meal prep, these will last up to 4 days. Recipe makes 4 servings.
Ingredients:
250g pork mince
1 red onion, sliced
1 yellow pepper, sliced
1 red pepper, sliced
400g kidney beans, warmed
400g chickpeas, warmed
400g chopped tomatoes
Fajita seasoning
2 cups brown rice
Method:
1. Cook the rice in a pan of boiling water
2. In a pan, fry the onions and peppers and set aside
3. In a separate pan, add a little oil and cook the mince
4. Add 2tsp of fajita seasoning to the mince and cook through
5. Add the can of chopped tomatoes to the mince and simmer gently for 20 minutes
6. To put the bowls together, start with the cooked brown rice, then the mince, followed by the onions, peppers, chickpeas and kidney beans
