Tasty breakfast muffins
Whether you're making these because you have left over quiche mixture or because you fancy a change, they are the perfect midweek treat!
Ingredients:
5 eggs
200g chopped bacon
1 small red onion
1 small red pepper
1 tsp Italian herbs
200g grated cheese
2 chopped tomatoes
200ml double cream
100ml milk
salt and pepper
Method:
Pre-heat the oven to 160 degrees (140 fan assisted)
1. Beat the eggs
2. Add the milk, double cream, salt and pepper and Italian herbs
3. Grease muffin tins (or lay cake cases into a muffin tray)
4. Add the onion, pepper, tomatoes and cheese into the greased muffin cases
5. Pour over the egg mixture
6. Bake in the oven for 40-50 minutes until firm
