Light & Fluffy American Pancakes
Makes 6 small pancakes.
Ingredients:
100ml milk
3oz plain flour
Half tsp baking powder
1 egg, beaten
1tbsp caster sugar
Pinch of salt
Knob of butter
Blueberries to serve
Maple syrup to serve
Method:
1. Heat a frying pan
2. Combine the milk, flour, baking powder, egg, caster sugar and salt in a jug and whisk until all the lumps are gone.
3. Add a knob of butter to the hot pan
4. When the butter is melted, pour a small amount of the mixture into the pan
5. When small holes begin to appear in the top of the pancake, flip it over (around 30 seconds each side)
6. Repeat steps 4 and 5 until all the mixture is gone.
7. Stack the pancakes on a plate
8. Drizzle with maple syrup blueberries
