Lemon Drizzle

Makes 2 individual loaves
Ingredients:
85g soft butter
135g caster sugar
1 beaten egg
85g self raising flour
Zest and juice of 1 lemon

Method: 
1. Heat oven to 140 fan assisted and line the loaf tin
2. Whisk together the butter, 75g of the caster sugar, egg, 2 thirds of the lemon zest and a third of the lemon juice
3. Bake in the oven for 30-40 minutes
4. Mix together the remaining sugar, lemon juice and lemon zest
5. When slightly cooled (10 mins) pour the mixture over the loaves and leave to cool completely
