Cheesy Potatoes
Serves 4 as a side dish. A great accompaniment to a British pie!
Ingredients:
4 large potatoes, peeled and sliced (1cm thick slices)
4 tbsp plain flour
2 tbsp butter
2 handfuls (minimum) grated cheese
Milk
Method:
1. Boil the potatoes until soft (about 30 mins)
2. Drain the potatoes and put in a shallow oven proof dish
3. To make the sauce, melt the butter in a small saucepan
4. Add the flour and whisk until mixture resembles dough
5. Fry off for about 30 seconds, stirring lightly (this will stop the sauce tasting of flour)
6. Slowly add the milk, whisking quickly
7. Keep adding milk until the sauce is a thick, lump free, consistency
8. Add in as much cheese as you like and simmer gently for 5 minutes, stirring continuously
9. Pour the cheese sauce over the potatoes, sprinkle with more grated cheese and place in the oven (180) for 10 minutes, until all the cheese is melted.
