Carrot Latkes
Latkes (traditionally potato latkes) are shallow fried savory pancakes, made for the Jewish festival of Hanukkah. This recipe uses Carrots instead of potatoes and serves 2 (making 6 latkes in total).
Ingredients:
5 carrots, finely grated
1 red onion, chopped
2 eggs, beaten
2tbsp plain flour
1tsp salt
Method:
1. Mix the carrots, onion and egg in a bowl
2. Add the flour and salt
3. Heat about 2tbsp oil in a frying pan
4. Fry the latkes (for about 3 minutes each side), on a high heat
