Butternut Squash Falafels
Falafels are a Middle Eastern dish made with chickpeas and typically served in a pita with salad. This recipe serves 4 and makes 12 good sized falafels.
Ingredients:
2 x 400g tins of chickpeas
1/2 butternut squash, roasted
1 garlic clove, finely chopped
1 red onion, diced
A small handful of fresh parsley, roughly chopped
1tsp chili powder
1tsp cumin powder
1tsp dried coriander
Olive oil to fry
Method:
1. Mash the roasted butternut squash
2. In a blender, pulse the chickpeas with a little water until they resemble a chunky puree
3. Lightly fry the red onion for 8 minutes and set aside to cool
4. Mix together the butternut squash, chickpeas, onion, garlic, parsley, chili, cumin and coriander
5. With your hands, make 12 balls from the mixture and set on a baking tray lined with baking paper
6. Place in the fridge to set for at least 20 minutes
7. Bake the falafels in the oven on 200 for 30 minutes
8. To finish them off, lightly fry the falafels for 20 seconds on each side
Tip: To make a meal, I serve mine with couscous, salad and a lemon mayonnaise.
