Butternut Squash Crisps

This recipe makes 1 serving of crisps.

Ingredients: 
1/2 butternut squash
A little olive oil
1 tsp dried rosemary (paprika also works well)

Method: 
1. Peel the butternut squash and cut into 1mm slices (or as thin as you can get them)
2. Boil some water
3. Boil the slices in batches for 3-4 minutes at a time
4. Line a baking tray with baking paper and brush on some olive oil
5. Lay the butternut squash onto the baking tray making sure none of the slices are overlapping
6. Brush over some olive oil and sprinkle the dried rosemary
7. Bake in a pre heated oven (200 fan) for 30 minutes, turning the slices over half way through
