A very messy, Eton Mess
Makes 4 wine glasses full of eton mess!
Ingredients:
4oz caster sugar
4oz icing sugar
4 egg whites
Double cream
1 small pot vanilla yogurt
300g tub Strawberries
Method:
Pre-heat the oven to 120 degrees
1. Whisk the egg whites with an electric whisk until they form soft peaks
2. Add in the caster sugar, a tbsp at a time
3. Turn off the whisk and fold in the icing sugar, one third at a time (this should make the mixture shiny).
4. Pour this onto parchment paper, and place in the oven for 1.5 hours
5. Take the meringue out of the oven and leave to cool
6. Put 1/4 of the srawberries into a blender with the vanilla yogurt and blend.
7. Place the meringue (broken up) into deep glasses with the strawberry and vanilla sauce and remaining strawberries and then drizzle with cream and serve.
