Rainbow Pizza
Makes 2 large pizzas
Using this recipe you can make any pizza you wish, just change the toppings!
Ingredients:
12oz Strong plain flour
One 7g fast acting yeast packet (dried)
A pinch of salt
A pinch of sugar
170ml warm water
2 tsp oil (sunflower or olive)
For the topping:
Half a tube of tomato puree
1 can of plum tomatoes
Handful of fresh basil
1 garlic glove, roughly chopped
Grated cheese (as much as you want)
1 red onion, chopped
Cooked sweetcorn
1 orange pepper, chopped
1 sweet yellow pepper
10 cherry tomatoes, quartered
4 stems of tenderstem broccoli
Method:
1. Add the flour and salt into a bowl with the sugar and yeast, mix well
2. Gradually add the oil and water into the bowl (oil first)
3. Combine by hand and knead for 10 minutes (if the dough doesn't combine, add a little more water)
4. Put the dough back into the bowl, rub in a little olive oil, cover with a damp tea-towel and leave to rise in a warm room for a couple of hours
5. Cover the work surface in a little flour
6. Split the dough into 2
7. Pre-heat the oven to 180, roll out the dough to make 2 pizza shapes
8. Cover 2 baking trays with baking paper and a little oil (make sure the whole cooking surface has oil on otherwise the pizza will stick to the paper)
9. Lay the pizza dough onto the baking trays and using a fork, prick the bases (this will ensure they don't rise when cooking)
10. Blend the tomato puree, garlic clove, chopped tomatoes (without juice) and basil together in a blender
11. Spread the sauce evenly over the 2 pizzas
12. Sprinkle with cheese
13. Add all veg (or toppings of choice)
14. Cover with some more cheese (this will help the toppings stick together and stay on the pizza)
15. Bake for 20 minutes
