Fake-away: Egg fried rice

Serves 4
The perfect substitute when you fancy a takeaway! You can add in any other ingredients you fancy; prawns, pork, chicken etc.

Ingredients: 
1 egg
1 cup of long grain rice
1/4 cup peas
1/4 cup finely chopped carrot
2 spring onions, chopped
1/2 red onion, finely chopped
1tsp sesame seed oil
2tsp reduced salt soy sauce (+ more to taste)

Method: 
1. Cook the rice and leave for 1 hour + to cool completely
2. Add a little oil to the wok and leave to heat
3. Fry the onion in the heated wok until it starts to brown
4. Remove the onion from the pan and set aside
5. Reduce the heat of the wok and leave to cool for a minute
6. Beat the egg with the sesame oil and soy sauce
7. Add this to the wok, when it binds together; flip it over until cooked both sides
8. Remove egg from wok, cut up into small pieces, set aside
9. Add spring onions, peas and carrot to the wok - stir fry for a few minutes
10. Add the rice and stir-fry for a further 2 minutes
11. Add in some more soy sauce and the egg mixture
12. Fry for another 2 minutes, then serve.
