Summer Sausage Stew

This colourful summer stew serves 4

Ingredients: 
8 sausages
1 red onion, sliced
1 garlic clove, chopped
1 red pepper, chopped
Half a courgette, chopped
2 sticks of celery, chopped
2 carrots, peeled and chopped
1 can of kidney beans
2tbsp tomato puree
1 can chopped tomatoes

Method:
1. Lightly fry the sausages until cooked
2. In a separate wok, add the onion, pepper, courgette, celery and carrots and fry in a little oil
3. When the vegetables start to soften, add the tomato puree and stir until it's mixed in
4. Add the cooked sausages, kidney beans and chopped tomatoes
5. Leave to simmer for as long as you can (I left mine for an hour)

Top tip: Serve with Moroccan spicy couscous and kale!
