Hearty vegetarian chilli

This hearty chilli is a fantastic meat free alternative and great for meal prep as it is equally tasty cold - keeps for up to 4 days!

Ingredients:
1 can of kidney beans
1 can of chopped tomatoes
1 can of chickpeas
2 sticks of celery, chopped
2 red peppers, chopped
2 red onions, chopped
3 carrots, peeled and chopped
2 tsp chilli powder
1 tsp cumin
Method: 
1. Heat some olive oil in a deep saucepan and fry the onions and carrots
2. Add the celery and red peppers after a couple of minutes
3. Season with the chilli powder and cumin and stir well
4. Add the chopped tomatoes and leave to simmer for 40 minutes, stirring occasionally
5. Add the chickpeas and kidney beans for the last 10 minutes
6. Serve with a jacket potato or brown rice
