Mini Victoria Sponges

Makes 2 individual sandwiches

Ingredients: 
50g caster sugar
50g soft butter
1 egg
50g self raising flour
1/4 tsp baking powder
Jam for the middles

Method:
1. Pre heat the oven to 170 fan assisted and butter a cake tin (or line with cake cases)
2. Beat all ingredients together (minus the jam)
3. Put into 4 cake cases
4. Bake for 20 minutes
5. When cool, remove from tin (and cases if you've used them)
6. Gently slice the top off 2 of the cakes and place them flat on a surface (a cake board for example)
7. Spread jam on top of the flat cake
8. Add another cake on top to form the sandwich and dust with icing sugar
