Butternut Squash Soup
This delicious soup serves 4 and is the perfect, low calorie winter warmer! Nutrition per serving: Calories: 78 Carbs: 18.6g Fat: 0.2g Protein: 1.7g Ingredients: Half a butternut squash, chopped 3 medium carrots, peeled and chopped 3 small potatoes, peeled and chopped 1 red onion, chopped 1 tsp honey 1 tsp ground ginger Method: 1. Fry the veg in a little drizzle of olive oil 2. When the veg starts to soften, add the ginger and stir 3. Drizzle in the honey and stir to coat all the veg 4. Add in a kettle full of boiling water and leave to simmer for an hour 5. When cooled slightly, blend the soup 6. Re-heat gently in a saucepan and serve.
